Cream of fava beans and chicories

The cream of fava beans and chicories is a poor dish of the Apulian tradition, made with simple and genuine ingredients.
The bitter taste of chicories, wild greens typical of this region, goes well with the sweetness and softness of dried pureed fava beans.
The cream is enriched with extra virgin olive oil of coratina variety which lends a intense note to the dish.
Heated or at room temperature, the cream of fava beans and chicories is ideal with warm garlic bread, with meat dishes or as a single dish.
