The oyster mushrooms are among the most flavorful and delicious variety of fungus, dark colored, meaty and solid looking.
Their natural habitat is the Murgia, where they grow spontaneously, and, preserved in extra virgin olive oil, they remind us the typical flavors of this area of Apulia.
Traditionally paired with meats and roasts, they find their highest expression even with pasta, rice and garlic bread.
